DANNIALLE'S HOLIDAY SWEET POTATOES | |
3-4 sweet potatoes (peeled and cut in circles) 1/2 cup (1 stick) butter 1 cup light brown sugar 1 cup dark brown sugar 1 tsp. cornstarch 1/4 tsp. cinnamon 1 bag mini marshmallows (I use Jet Puffed) 1 (4-quart) oblong glass baking pan Preheat oven to 400°F. In a small bowl combine both sugars, cornstarch and cinnamon. Melt butter in microwave and set aside. Line bottom of pan with one layer of sweet potatoes, sprinkle about 1/4 cup of sugar mixture over sweet potatoes, drizzle some of the butter over that and then cover the top with marshmallows. Repeat layering process one or two more times. Be sure to top it off with marshmallows. Cover with foil and bake at 400°F for 20 to 30 minutes, then uncover and bake for an additional 10 to 15 minutes. Submitted by: Dannialle |
