ZUCCHINI FUDGE CAKE 
1/2 c. butter
1/2 c. oil
1 3/4 c. sugar
1 tsp. vanilla
2 eggs
4 tbsp. cocoa
2 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. baking powder
1/2 c. sour milk or buttermilk
2 c. coarsely grated zucchini

Combine butter, oil and sugar. Beat in vanilla and eggs. Add cocoa, flour, baking soda, salt and baking powder alternately with sour milk or buttermilk. Stir in zucchini (unpeeled). Pour into 9 x 13 inch greased and floured pan.

TOP WITH:

1 tbsp. sugar
1 c. chocolate bits
1/2 c. nuts

Mix together. Then bake at 350 degrees for 40-45 minutes.
