LIGHT BANANA BREAD 
1 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. baking powder
1/4 tsp. ground nutmeg
2 egg whites
1 c. sugar
1 c. mashed ripe bananas
1/4 c. cooking oil
1/2 c. currants
Non-stick spray coating

Stir together flour, baking soda, cinnamon, baking powder, nutmeg and 1/4 teaspoon salt. In mixing bowl, beat together egg whites, sugar, and banana. Add oil and mix well. Stir flour into mixture. Gently fold in currants.

Spray an 8 x 4 x 2-inch loaf pan with non-stick coating. Pour in batter. Bake in 350 degree oven for 55 to 60 minutes or until wooden toothpick near center comes out clean. Cool in pan 10 minutes. Makes 1 loaf (16 servings). 150 calories per slice.
