“LIGHT BANANA BREAD” IS IN:

LIGHT BANANA BREAD 
1 1/2 c. all-purpose flour
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. baking powder
1/4 tsp. ground nutmeg
1/8 tsp. salt
2 egg whites
1 c. sugar
1 c. mashed banana
1/4 c. cooking oil
1/2 c. currants

In a mixing bowl, stir together flour, baking soda, baking powder, cinnamon, nutmeg, and salt. In another bowl, beat together egg whites, sugar and banana. Add oil and mix well. Stir flour mixture with banana mixture.

Gently fold in currants. Spray an 8x2 inch loaf pan with non-stick spray. Pour batter into pan. Bake at 350°F for 55 to 60 minutes. Cool 10 minutes. Remove from pan.
