LIGHT BANANA BREAD 
1 1/2 c. all-purpose flour
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. baking powder
1/4 tsp. ground nutmeg
2 egg whites
1 c. sugar
1 c. mashed ripe bananas
1/4 c. cooking oil
1/2 c. currants
Nonstick spray coating

Stir together flour, baking soda, cinnamon, baking powder, nutmeg and 1/8 teaspoon salt. In mixing bowl, beat together egg whites, sugar and banana. Add oil and mix well. Stir flour mixture. Gently fold in currants.

Spray an 8x4x2 inch loaf pan with nonstick coating. Transfer batter to prepared pan. Bake in 350 degree oven for 55 to 60 minutes or until wooden toothpick inserted near center comes out clean. Cool in pan for 10 minutes. Remove from pan; cool thoroughly on a wire rack. Makes one loaf (16 servings).
