SWEDISH DOUGHNUTS | |
4 1/2 c. sifted flour 4 tsp. baking powder 1/2 tsp. nutmeg 1/2 tsp. baking soda 1 tsp. salt 3 eggs, beaten until light and fluffy 1 c. sugar 1 c. mashed potatoes 2 tbsp. melted shortening 3/4 c. buttermilk 1/2 tsp. vanilla Sift flour, baking powder, nutmeg, soda and salt together. Mix eggs, sugar, potatoes, shortening, buttermilk and vanilla; combine with dry ingredients. Roll 1/2 inch thick on floured board; cut with 2 1/2 to 3 inch cutter. Fry in deep vegetable shortening. Yield 18-24 doughnuts. |
