STEAMED SPINACH 
Spinach
Salt and pepper to taste

Spinach must be rinsed thoroughly once or twice before cooking. Put the spinach in a stainless steel pan and steam over boiling water. Cook no more than to just barely wilt the spinach - 2-3 minutes. Drain the excess water and season. The trick about cooking spinach is that it must not be cooked very long; otherwise it becomes bitter.
