TUNA ZUCCHINI CAKES | |
1 c. shredded zucchini 1/4 c. chopped onion 1/2 tsp. minced garlic 2 tsp. butter 6 1/2 oz. can tuna, drained 1 egg 1 1/2 c. bread cubes (3 slices) 1/4 tsp. salt, optional 1/4 tsp. pepper Saute zucchini, onion and garlic in 1 teaspoon butter about 5 minutes; mix with remaining ingredients (except butter) until blended. Form into 6 patties and brown in skillet over medium heat (about 3 minutes per side). Serve with horseradish dip (mayonnaise with horseradish to taste). |
