VEGETABLE CASSEROLE 
1 (16 oz.) bag frozen mixed vegetables
1 can water chestnuts, chopped
1 c. onion, finely chopped
1 c. sharp cheddar cheese, cubed
1/2 c. sour cream
3/4 c. mayonnaise
1/2 box cheddar cheese crackers (Better Cheddars)
3/4 stick butter, melted

Cook vegetables as directed on package in salt water, drain and add next 5 ingredients in 2 quart casserole. Mix. Crumble crackers and spread broken crackers over the top. Then dribble butter over all. Bake at 350 degrees for approximately 30 minutes or until it bubbles through the top.
