1 c. dark molasses
1 c. Spry or shortening
1 egg
1 c. white sugar
1/2 c. hot water
2 tsp. baking soda
1 tbsp. lemon extract
Grated rind of 1/2 lemon
1/2 tsp. salt
5 c. flour

Cream shortening, sugar, and add egg and molasses; beat. Add soda which has been added to hot water; add lemon extract and rind, salt and flour. Drop by spoon on cookie sheet. Bake at 350 degrees for 8 minutes.

FROSTING:

1 1/2 c. powdered sugar
1 tbsp. butter
2 tbsp. coffee (liquid boiled coffee, cool)
vanilla

Add mix slowly. When all is mixed, place in top of double boiler which has very hot water - not on stove. Frost cookies while still warm so the frosting runs. Don't put the double boiler on stove.
