SANTE FE PASTA SALAD 
2 1/2 c. (6 oz.) Rotelle or Rotini noodles
3/4 lb. thinly sliced roast beef, cut in strips
1/2 c. sour cream
1 tsp. ground cumin
1/4 c. green onions, sliced
2 tbsp. lime juice, fresh
1 c. tomato, chopped
4 oz. green chilies, chopped
1/2 tsp. salt
3 tbsp. cilantro, chopped
1 tbsp. vegetable oil (or olive)
1/2 c. green bell pepper, chopped

Cook pasta, then rinse with cold water to prevent stickiness of noodles. In a large bowl combine sour cream, chilies, cumin, and salt. Mix well. Stir in pasta and chill.

In medium bowl combine green onions, cilantro, lime juice, and oil. Mix well. Add beef; toss until well coated. Chill. Place pasta on platter and top with meat mixture. Sprinkle with tomato and green pepper.
