SOUTHERN PECAN OATMEAL CAKE 
1 1/2 c. boiling water
1 c. oats, quick cooking or regular
1/2 c. butter (1 stick)
1 c. brown sugar
1 c. sugar
2 eggs
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt

TOPPING:

6 tbsp. butter, melted
1/2 c. sugar
1 c. chopped pecans
1/4 c. evaporated milk

Pour boiling water over oats; add butter and let stand until melted. Stir in sugar, eggs, and sifted dry ingredients. Turn into greased cake pan, about 9 x 9 and bake at 350 degrees for 30-35 minutes. While cake is still warm, spread with mixture of topping ingredients, and place cake under broiler until bubbly and golden brown. 8-12 servings.
