HEALTHY HEART POTATO SOUP 
5 c. peeled, diced potatoes
1 1/2 tbsp. grated onions
2 1/2 c. water
Salt and pepper to taste

Combine and cook above ingredients about 8 minutes or until tender. Remove from heat. Pour off half the water. Add:

3 tbsp. no cholesterol butter
1 (12 oz.) can evaporated skimmed milk
1 c. grated low-fat Cheddar cheese

Return to heat. Stir until heated thoroughly and cheese is melted. Spoon into mugs. Garnish with croutons.
