QUICK LEMON CRISPS 
1 3/4 c. flour
3/4 tsp. baking soda
Dash of salt
3/4 c. of shortening (oleo)
1 c. sugar
2 pkgs. (4-serving size each)
Lemon flavor instant pudding and pie filling
3 eggs

Mix flour with soda and salt. In large bowl cream shortening. Add sugar and pudding mix, beat until light and fluffy. Add eggs one at a time beating well after each addition. Gradually stir in flour mixture, mix until well blended. Drop from teaspoon onto greased cookie sheet about 2 inches apart. Bake in 375 degree oven for 8 to 10 minutes. Makes 5 dozen cookies. May be iced if desired.
