LUSCIOUS LEMON SQUARES 
1/2 c. butter
1 c. flour, sifted
1/4 c. confectioners' sugar

Preheat oven to 350 degrees. Mix 1/2 cup butter with 1 cup flour and add 1/4 cup confectioners' sugar. Press mixture into bottom of 9 inch square pan. Bake for 12 minutes. Cool for 15 minutes.

FILLING:

1/2 tsp. baking powder
2 tbsp. lemon juice
1 lemon rind, grated
2 eggs, well beaten
1 c. sugar
2 tbsp. flour

Blend ingredients together well. Place on baked layer. Bake for 25 minutes. Cool for 30 minutes.

FROSTING:

3/4 c. confectioners' sugar
1 tsp. vanilla
1 tbsp. butter
1 tbsp. milk
1 c. shredded coconut

Blend all ingredients thoroughly. Spread over filling. Cut into small squares to serve. I usually double this recipe and use a 16 x 12 inch pan which makes the squares extra thin.
