POTATO OMELETTE 
1 gallon hash browns (frozen, dry, reconstituted) (18 sq. frozen)
1 qt. onions, chopped fine
36 eggs, beaten
1 tsp. pepper
3 qt. hot milk
2 c. butter

Melt butter in pans in oven. Add hash browns, onions to melted butter. Brown in oven at 300 degrees for 30 minutes. Combine remaining ingredients. Pour over potatoes. Bake 35 minutes at 250 degrees until set. If using cold milk, you will bake longer. Insert knife to test for doneness. Serves 50.
