CHICKEN FETTUCCINE DELUXE | |
1/4 c. butter 1/3 c. flour 2 c. chicken broth 3/4 c. Half and Half 1/4 c. white wine 1 c. sliced fresh mushrooms or 1 (4 oz.) can mushrooms 1 tsp. salt 1/4 c. butter 8 oz. Fettuccine 2 c. cooked chicken or turkey pieces 1/3 c. grated Parmesan cheese 4 oz. cooked ham, cut in julienne strips Melt butter in large saucepan. Blend in flour. Gradually add chicken broth, stirring constantly, then add Half and Half. Cook until thickened, stirring constantly. Add wine, salt and pepper. Saute mushrooms and strips of ham in second 1/4 cup butter. Meanwhile cook Fettuccine (do not overcook), drain. Add mushrooms, ham, chicken and Fettuccine to sauce. Turn into individual casseroles or a lightly greased 2 quart casserole. Sprinkle with Parmesan. Heat in 350 degree oven until cheese is melted and golden brown - about 15 minutes. Serves 4-6. |
