EGGPLANT CASSEROLE | |
1 eggplant (about 1 lb.), diced & cooked 1 c. grated low-fat cheese 3/4 c. non-fat milk 4 egg whites, beaten 1 tsp. onion 1 tsp. garlic 1 c. whole grain, low-salt crackers, crushed (topping) 1. Combine the first 6 ingredients. Pour into a 9-inch casserole dish. Top with crushed crackers. 2. Bake at 350 degrees for 25 minutes. "With only 120 calories in the entire eggplant, this is a delicious, low-everything side or main dish." |
