CHEESE CAKE - CRUMB CRUST 
2 c. graham cracker crumbs
3 tsp. sugar
1/2 c. melted butter

Mix ingredients together and reserve 3/4 cup crumb mixture for the top of cheese cake. Press remaining crumb mixture on bottom and around sides of cheese pan.

Bake at 400°F for 10 minutes.

Filling:

2/3 c. sugar
1/2 tsp. salt
4 eggs, separated
2 tbsp. flour
1 tsp. vanilla
1/2 c. grated lemon rind
1 tsp. lemon juice
1 c. light cream

Combine all and put into pie shell and bake at 350°F for 1 hour and 20 minutes.
