IRISH SODA BREAD | |
4 c. Bisquick baking mix 1 c. whole wheat flour 3 tbsp. sugar 1/4 c. firm butter 2 eggs 1 1/2 c. buttermilk Preheat oven to 350 degrees. Generously grease 1 1/2 quart round casserole dish. Mix Bisquick, flour, and sugar in large bowl. Cut in butter until crumbly. Beat eggs slightly; reserve 1 tablespoon of beaten egg. Stir the remaining eggs and the buttermilk into the flour mixture until moistened. Turn dough out onto well floured cloth covered board. Knead 20 times. Shape dough into ball; place in casserole dish. Cut 4 inch cross about 1/4 inch deep in center of ball. Brush top of the dough with reserved egg. Bake until wooden pick inserted in center comes out clean, 60 to 70 minutes. Cool 10 minutes; remove from casserole and cool on wire rack. |
