VEAL OR PORK CHOP SKILLET 
2 tbsp. vegetable oil
2 lb. (6) veal or pork chops
8 sm. new potatoes in sm. cubes
4 med. carrots, peeled and sliced 1 1/4 inch lengths
1 med. onion, finely chopped
1 c. chicken broth
1/2 tsp. salt
1/2 tsp. thyme
1/8 tsp. pepper
2 cloves minced garlic

Heat oil in 12-inch skillet for 1 minute. Add chops, brown on both sides about 15 minutes total. Drain fat. Add all other ingredients. Cover and cook over reduced heat 45 minutes.
