TUNA OR SALMON PUFFS 
1 (14 oz.) can tuna or salmon
1 heaping tsp. baking powder
Dash of pepper if desired
1 egg
1/2 c. flour or cornmeal mix

Drain salmon or tuna reserving 1/4 cup liquid. Shred meat with a fork in mixing bowl. Add flour or cornmeal mix, slightly beaten egg and dash of pepper if desired. Mix well. Add baking powder to reserved liquid and beat well with fork until foamy. Pour into meat mixture and stir until blended. Using 2 tsp. (scoop mixture with one and rake it out with other into deep fryer). Cook until golden color.
