POTATO DOUGHNUTS 
1 c. mashed potatoes
1 c. sugar
2 tbsp. melted butter
2 eggs, well beaten
1 tsp. vanilla
1 c. milk
1/2 tsp. salt
4 tsp. baking powder
1/2 tsp. nutmeg
Enough flour to make soft dough (approx. 3 3/4 c.)

Combine potatoes, sugar, butter, eggs, milk and vanilla. Sift flour with salt, baking powder and nutmeg. Mix thoroughly. Add sufficient flour to make soft dough. Roll out 1/4 inch thick, cut with doughnut cutter and deep fry.
