COCONUT CREAM PIE 
1 baked pie shell
1 c. coconut (fresh, frozen, canned)
3/4 c. sugar
4 tsp. flour
1 1/2 c. sweet milk
2 tsp. butter
3 egg yolks, beaten
1/2 tsp. vanilla

Stir flour and sugar. Add eggs, milk and vanilla. Stir well. Add butter and cook in saucepan until thickened. Add coconut and pour in pie shell. Top wit h meringue. Brown in slow oven. Yield: 1 pie.

MERINGUE:

3 egg whites
3 tsp. sugar
1/2 tsp. vanilla

Beat egg whites until foamy. Add sugar; whip until stiff peaks form, not dry.
