TURKEY SALAD 
27 qts. baked, boned and cubed turkey meat (about 120 to 132 lbs. turkey)
1 1/2 qts. thin French dressing
24 qts. diced celery
1/4 c. salt
6 to 7 qts. Miracle Whip
3 1/2 tbsp. onion juice (put onions in blender to make juice)
1/2 c. lemon juice

Mix together salt, Miracle Whip, lemon juice and onion juice together. 2 qts. coarsely chopped walnuts 10 heads lettuce, cleaned and cut into bite size pieces

FRENCH DRESSING FOR TURKEY SALAD:

1/2 tbsp. crushed garlic
1/2 c. sugar
1/2 c. onion juice
1/2 c. tarragon vinegar
2 c. cider vinegar
2 tbsp. salt
1 tbsp. mustard
1 tbsp. paprika
1/2 tbsp. pepper
1 qt. plus 1 c. salad oil
