FLANK STEAK EXTRAORDINAIRE! 
Serves: 4 Preparation: 20 minutes Simmer: 30 minutes

2 1/2 lb. flank steak
1 chopped onion
4 tbsp. butter
3 tbsp. vinegar
1 tsp. mustard
1 tsp. paprika
1 tsp. thyme
1 tsp. salt, if desired
1 tsp. pepper
1/4 tsp. Cayenne pepper
1 c. water

Cut steak across in 1/4-inch strips. Brown onion in 2 tablespoons butter until slightly brown. Dredge steak in flour and add to onion and saute until browner. In separate pan, melt 2 tablespoons butter and add spices, then water. Pour sauce over steak and cover pan. Simmer 1/2 hour.

Delicious with plenty of homemade bread to soak up the sauce!!
