PINEAPPLE - UPSIDE - DOWN CAKE 
1/2 stick butter
1/4 c. brown sugar
1 lb. can pineapple slices
Maraschino cherries
1 1/4 c. flour, sifted
2 tsp. baking powder
1/2 tsp. salt
1 1/4 c. sugar
1/4 c. vegetable shortening
1 egg
1 1/2 tsp. vanilla
3/4 c. milk

Melt butter, then pour in 9x9x2 baking pan. Sprinkle brown sugar over butter; arrange pineapple slices putting a cherry in the middle of each one. Put flour, baking powder, salt, and sugar in large bowl; add milk and shortening. Beat 2 minutes at medium speed, then add egg and vanilla and beat 2 more minutes. Pour over pineapples in pan and bake at 350 degrees for 45 minutes or until toothpick comes out dry.
