PINEAPPLE UPSIDE DOWN CAKE 
1 1/2 c. flour
2 tsp. baking powder
1 c. sugar
1/2 c. milk
3/4 c. brown sugar
Maraschino cherries
1/2 tsp. salt
1/2 c. plus 2 tbsp. butter
2 lg. eggs, separated
1 tsp. vanilla
1 (20 oz.) can pineapple

Preheat oven to 350 degrees. Mix flour, baking powder, and salt in bowl. Beat 1/2 cup butter and sugar in bowl until light and fluffy. Add egg yolks one at a time beating well after each addition. Combine milk and vanilla. Stir dry ingredients into yolk mixture alternately with milk mixture beginning and ending with dry ingredients. Beat egg whites in bowl until stiff but not dry. Fold into batter. Melt 2 tablespoons butter in 10 inch skillet brushing sides. Sprinkle with brown sugar and add drained pineapple in single layer. Pour batter on top.

Bake 40-45 minutes until toothpick inserted comes out clean. Loosen edge from pan and immediately invert on plate. Cool. Garnish with cherries. Makes 8 servings.
