EGGPLANT PARMIGIANA 
2 lg. eggplants
1 c. pizza sauce
1 tsp. oregano
8 oz. Mozzarella cheese
1/4 tsp. oregano
1 tsp. olive oil
Flour for coating
Oil for frying

Slice eggplants and coat with flour. Brown in hot oil in a frying pan. Drain well. Place fried slices in a 9 x 13 inch pan. Pour pizza sauce over all, sprinkle on 1 teaspoon oregano, top with sliced Mozzarella cheese. Sprinkle 1/4 teaspoon oregano on top and dribble olive oil over all. Bake at 350 degrees for 20-25 minutes.
