OATMEAL BREAKFAST MUFFINS 
2/3 c. oil
2 c. buttermilk
2 eggs
2 tsp. cinnamon
1 c. brown sugar
2 c. flour
2 c. quick oats
1 tsp. baking soda
1 tsp. salt
2 tsp. baking powder

Mix the first 3 ingredients and then combine dry ingredients. Add dry ingredients to wet ingredients. DO NOT MIX MUFFINS ANY LONGER THAN TO MOISTEN DRY INGREDIENTS - small lumps are normal. Bake in 400 degree oven 18-20 minutes.
