SPICY EGG ROLLUPS 
1 lb. bulk pork sausage
6 eggs, lightly beaten
1/3 c. milk
1 tbsp. butter
Guacamole
2 c. (8 oz.) shredded cheddar cheese
1 (12 oz.) pkg. flour tortillas
Picante sauce
Sour cream

Cook sausage until brown; crumble. Drain. Set aside. Combine eggs and milk; mix well. Melt butter over medium heat. Pour in egg mixture and cook without stirring until eggs begin to set. Draw spatula across bottom of pan to form large curds. Continue to cook until eggs are thick, but moist. Remove from heat. Divide tortillas into 2 stacks. Microwave with 2 moist paper towels over each pile for 30 to 45 seconds. Layer sausage, eggs and cheese on each tortilla. Roll up. Serve immediately with remaining ingredients.

Since microwave ovens vary in power, you may need to adjust your cooking time.
