DAAL - BHAT - NEPAL 
1 c. orange lentils
1 onion
2 tsp. turmeric
3 dried red peppers
1 tbsp. fresh chopped ginger
1 tbsp. fresh chopped garlic
3 tsp. salt

CURRIED VEGETABLES:

2 or 3 variety of vegetables
1 onion
2 tbsp. oil
1 tbsp. cumin
1 tsp. ginger
1 tsp. turmeric
1 tsp. chopped garlic

Wash lentils; fry onion and pepper until brown. Add water (3 cups), salt, and turmeric. Boil until it becomes gravy-like, stirring often. Before serving, add ginger and garlic. Cook 5 minutes.

Vegetables suggested: Cauliflower, green beans, potatoes, cubed squash, and peas. Cook all ingredients together until vegetables are soft.

Meat: Cut 2 pounds meat in chunks; fry in 2 tablespoons oil. Add cumin, coriander, curry, and graham masala - 1 teaspoon each. Add a pinch of cardamom.

Serve above with rice.
