ESCALLOPED CABBAGE 
3 qt. chopped cabbage
1 1/2 qt. water
2 tsp. salt
3 tbsp. butter
1/4 c. flour
1 1/3 c. milk
1 1/3 c. American cheese - cut up
2 tbsp. butter
2 1/2 c. soft bread crumbs

Bring water with salt to a boil. Add cabbage. Cook 5 minutes - no more and drain. Put this into a 9 inch square casserole.

Melt 3 tablespoons butter plus 1 teaspoon salt. Add flour, mix. Add 1 1/3 cups milk to make white sauce. Cook to thicken slightly.

Remove from heat and add 1 1/3 cups cheese. Stir until cheese melts. Pour the cheese sauce over the cabbage.

Melt 2 tablespoons butter in a skillet and add soft bread crumbs to brown a bit. Sprinkle over cabbage and sauce.

Bake 20 minutes at 350 degrees.
