FUNNEL CAKES 
2 eggs
1 1/2 c. milk
2 c. flour
2 tbsp. sugar
1 tsp. baking powder
1/2 tsp. salt
2 c. oil
1 tsp. vanilla

Beat eggs in large bowl and add milk, flour and sugar. Add baking powder, salt and vanilla. Blend until smooth. Heat oil in frying pan or electric skillet to 350 degrees. Holding finger under the bottom spout of a 4 inch funnel, pour in 1/2 cup batter. While making a circular motion, release finger and pour batter into hot oil. Start in the center and work your way out. Fry for 3 minutes on one side; turn and fry 1 more minute or until a golden brown. Remove and drain on paper towel. Sprinkle with powdered sugar.
