BETH'S CHICKEN CASSEROLE 
3 lb. boiled chicken, skinned and boned
1 c. sour cream
1 can cream of chicken soup
1 tbsp. lemon juice
2 c. crushed Ritz crackers
1 1/2 sticks butter
poppy seed or sliced almonds

Put chicken (chopped) with sour cream, soup and lemon juice in baking dish. Melt butter and mix with crumbs. Add poppy seed or almonds on top of chicken mixture; then top with cracker crumbs and bake at 350°F for 40 minutes.
