ARROZ CON POLLO 
1 fryer, cut in 10 pieces
1 1/2 c. chopped onions
1 pkg. yellow rice mix with seasoning packet
1 c. frozen green peas
1 jar whole pimentos, drained and cut in strips

Brown chicken in a large, deep non-stick skillet 5 minutes per side over medium heat. Remove with slotted spoon. Stir onions into drippings and cook 4-5 minutes to golden. Stir in rice, seasoning packet and 2 cups water. Place chicken, skin side up, on rice. Bring liquid to a boil, reduce heat, cover and simmer 15 minutes. Stir in peas, cover and simmer 3-5 minutes until rice is tender and peas are hot. Remove from heat. Top with pimento.
