3 eggs 2/3 c. pumpkin 1 c. sugar 1 tsp. baking soda 3/4 tsp. cinnamon 3/4 c. flour 1 c. chopped walnuts FILLING: 4 tbsp. soft butter 8 oz. cream cheese, soften 3/4 tsp. vanilla 1 c. powdered sugar Grease 10 x 15 inch jelly roll pan and line with wax paper. Beat eggs, pumpkin and sugar until well mixed. Blend soda, cinnamon and flour with a fork then add to pumpkin mixture and beat well. Pour into jelly roll pan and sprinkle top with chopped walnuts. Bake at 375 degrees for 15 minutes. Sprinkle sugar on cake while hot. Place tea towel over cake and flip over. Peel off wax paper. Roll in tea towel like a jelly roll. Cool completely. Then unroll and spread on filling. FILLING: Beat all ingredients until fluffy and smooth. Spread on cake and roll like a jelly roll. Refrigerate and enjoy. |
