CHRISTMAS ROLLS 
6 oz. whole Brazil nuts
1/2 lb. pitted dates
6 oz. cherries (red & green mixed), cut in half
1/2 lb. pkg. vanilla wafers, crushed fine
1 tsp. finely chopped ginger
1/2 lb. marshmallows, cut
1/2 c. evaporated milk
1 tsp. lemon rind, grated
1/8 tsp. cinnamon
1/8 tsp. allspice
1/8 tsp. nutmeg
1/2 tsp. ginger
1/2 tsp. salt
3 c. shredded coconut

In top of double boiler, put milk, marshmallows, lemon rind, salt and spices. Stir until melted, remove from heat, add fruits, nuts, etc. Shape into 2 rolls, desired length and roll in coconut. Wrap and store in refrigerator.
