SWEET POTATO FRITTERS | |
1 c. plus 2 tbsp. flour 1 tsp. baking powder 2/3 c. milk 2 eggs, beaten 2 tbsp. melted butter 4 slices bacon, fried and crumbled 2 c. shredded, uncooked sweet potatoes Combine flour and baking powder. Add milk, eggs and butter; stir well. Add potatoes and bacon stirring well. Heat 3 to 4 inches oil in pan. Drop by tablespoons into hot oil. Fry until golden brown on both sides. Drain. Serve warm with syrup. |
