FISH CREOLE 
1 (16 oz.) pkg. frozen cod fillets
1 tbsp. unsaturated oil
1 1/2 c. chopped onions
1/2 c. chopped green pepper
2 cloves minced garlic
4 tomatoes, peeled and chopped
2 tbsp. chopped parsley
2 tsp. paprika
1/2 tsp. sugar
1/8 tsp. ground pepper
1 bay leaf
2 c. hot cooked brown rice, prepared without added salt

Partially thaw cod fillets. Leaving in a block, cut into 1 inch pieces. Set aside. In a large, nonstick fry pan, over medium heat, saute onions, pepper and garlic in oil until tender. Add tomatoes, parsley, paprika, sugar, pepper and bay leaf. Heat to a boil; reduce heat, cover; simmer 30 minutes. Add fish; cook about 5 minutes more or until fish flakes easily. Serve with or over rice.
