BUTTERNUT SQUASH SOUP 
2 lg. butternut or other sweet squash (may use sweet potatoes)
6 tbsp. unsalted butter
2 med. onions, sliced
6 c. chicken stock (fresh preferred, canned acceptable)
Salt and pepper
Pinch of nutmeg
Pinch of sugar
2 slices French bread, cut 1 inch cubes
Fresh grated Parmesan cheese
