FAVORITE COCONUT WAFFLES 
1 1/2 cups all-purpose flour
1 1/2 tsp. baking powder
1/8 tsp. salt
1 tbsp. sugar
3 eggs, separated
1 1/2 cups milk
3 tbsp. butter, melted
1 cup flaked coconut, divided

Sift together first four dry ingredients. In a separate bowl, beat egg yolks and milk, then add to the flour mixture. Stir in melted butter and 3/4 cup of coconut flakes. In a separate bowl, beat egg whites until stiff. Fold into batter.

Cook in a medium-hot waffle iron. Sprinkle with remaining coconut flakes before serving.
