CHRISTMAS FRUIT CAKE 
3 lbs. mixed candied fruit
6 eggs
1 c. butter
1 c. sugar
2 c. applesauce
1/2 c. apple juice
3 c. flour
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
2 tsp. nutmeg
1/4 tsp. allspice
1/2 tsp. mace

Pour apple juice over fruit - let stand 3 hours. Beat eggs until very light. Cream together with butter and sugar. Add applesauce. Sift dry ingredients and add to creamed mixture.

Slightly grease 6 mini loaf pans. Bake at 325 degrees 45 to 60 minutes or bake at 275 degrees for 3 1/2 hours in large tube pan (greased). Decorate tops with red and green candied cherries.
