RIGATONI 
2 lbs. Italian or bulk sausage
1 c. chopped onion
1 lg. clove garlic, minced
2 (12 oz.) cans tomato paste
4 c. water
1 1/2 tsp. salt
1 1/2 tbsp. basil
3 tbsp. parsley
Pepper to taste
1 lb. Rigatoni noodles
1/3 c. Parmesan cheese
Mozzarella cheese

Brown sausage and drain well. Stir in onion, garlic, tomato paste, water and seasonings. Simmer, uncovered for 30 minutes, stirring occasionally. Prepare Rigatoni to package directions for baked dishes. Place in 9"x15"x2" baking dish. Cover with sausage, sauce and cheese. Top with a good covering of Mozzarella cheese. Bake, uncovered at 350 degrees for 25 to 30 minutes.
