FLORENTINE SALAD | |
1 (3 oz.) lemon gelatin, sugar free 1 c. hot water 1 (10 oz.) pkg. frozen chopped spinach, uncooked, well drained 1/2 c. Miracle Whip (light) 1 c. dry cottage cheese, preferably lg. curd 1 tsp. vinegar 1 tbsp. minced celery 1 tsp. grated onion 1/2 c. chopped fresh parsley Dissolve gelatin in hot water; cool and chill until it starts to thicken. Mix in remaining ingredients. Pour into 2" deep pan or mold. Chill until set. Yield: approximately 4 1/2 cups. If using sugar free gelatin and "light" Miracle Whip, this has only 125 calories per cup. |
