PASTOR MARK'S POTATO PANCAKES | |
5 - 6 medium potatoes, shredded 1 egg, beaten 1 medium onion, minced 1/2 c. flour 1 tsp. salt 1/2 tsp. pepper 2 tbsp. olive oil Shred potatoes and onion in food processor. Heat oven to 400°F. Mix potato-onion mixture and remaining ingredients together. Line baking pan or cookie sheet with sides with aluminum foil. Spray with Pam. Place mix onto foil and flatten out. Make lines to define each section of pancake. Cook 15 minutes, then flip over when firm. Can use broiler if you want it crispy on top. |
