EASY PECAN COOKIES 
1 tsp. baking soda
1 tbsp. hot water
1 c. butter, softened
1 c. firmly packed brown sugar
2 eggs
1/2 tsp. vanilla
3 3/4 c. plain flour
1 c. chopped nuts

Combine soda and water; mix well; set aside. Cream butter, gradually add sugar, beating until light and fluffy. Add eggs, beating well; stir in soda mixture and vanilla. Add flour until blended. Stir in pecans. Shape dough into long rolls, wrap in wax paper and chill 2 or 3 hours.

To bake, slice and place on an ungreased cookie sheet. Bake at 350 degrees for 10 minutes. Yield: 6 1/2 dozen.
