CORN SOUP WITH CHILIES 
2 scallions, chopped
1 clove garlic, minced
1 tbsp. butter
2 c. or 1 (10 oz.) pkg. frozen cut corn
2 new potatoes, diced
1 qt. chicken stock
2 tsp. green pepper, minced
5 oz. fresh baby limas
1 red chili pepper, sliced
Salt if desired
Parmesan cheese, grated

Saute scallions and garlic in butter for 2-3 minutes. Add corn, new potatoes and stock; simmer for 15 minutes. Add green pepper and limas and red pepper. Simmer until limas are just cooked through. Garnish bowls of soup with cheese.
