SUGARLESS FRUIT-NUT MUFFINS 
1 c. chopped dates
1 c. raisins
1 c. chopped prunes
1 c. water
1/2 c. butter, cut into pats
1/4 tsp. salt
2 eggs, beaten (or use egg substitute)
1 tsp. vanilla
1 c. all-purpose flour
1 tsp. baking soda
1 c. chopped nuts
1/4 tsp. cinnamon
1/4 tsp. nutmeg

In a saucepan, combine dates, raisins, prunes and water. Bring to a boil and boil for 5 minutes. Stir in butter and salt. Set aside to cool. Add remaining ingredients to fruit; stir just until dry ingredients are moistened. Spoon into greased mini muffin pans. Bake at 350 degrees for 15 minutes.

This is especially for diabetics, but is very good, even if you don't have to watch your sugar.
