CHICKEN CASSEROLE 
1 box chicken Rice-A-Roni
4 to 6 chicken breasts
1/2 c. chopped celery
1/2 c. chopped onion
1/2 c. chopped bell pepper
1 small jar pimento
1 can water chestnuts (optional)
1 can mushrooms (optional)

Topping:

1 c. shredded sharp cheese
20 crushed saltine crackers
1 stick melted butter

Mix topping ingredients together. Cook and cut chicken into bite-size pieces. Cook Rice-A-Roni as directed on box. Mix all ingredients and place in greased casserole dish. Add topping.

Bake at 400°F for 20 minutes or until topping is brown.
